Pizza Night!

Well tonight Rob fancied a pizza take away, and I luuuuurvvve pizza but always feel so bloated after eating one, so as not to feel left out I found last week a recipe for cauliflower crust pizza on Stick a Fork In It Blog so thought I had to give it a go!

Ingredients:-

  • 1 cup riced cauliflower
  • 1 cup shredded mozzarella cheese
  • 1 egg, beaten
  • 1 tsp. dried oregano
  • 1 garlic, crushed
  • 1/2 tsp. garlic salt
  • olive oil for brushing

Instructions:

First you had to rice the cauliflower. Take 1 large head of cauliflower, chop the florets into chunks and process until it resembles rice. You can use a grater if preferred, but this was much quicker.

Then place the cauliflower in a microwave bowl, add 1/4 cup of water and microwave for 6-8 minutes.

Pre-heat oven 450 degrees Fahrenheit or Gas mark 8, spray a pizza pan or baking tray with non-stick cooking spray (make sure this is done as it will stick).

In a medium bowl, combine the cauliflower, mozzarella cheese and egg together and stir until well incorporated.

Add oregano, garlic and garlic salt.  Transfer to your tray and shape into a 9-inch circle.  Brush the crust with olive oil to help it brown in the oven.

Bake at 450 degrees Fahrenheit /gas mark 8 for 15 minutes, until the crust is browned and cooked through the middle.

Remove the crust from the oven, add your sauce and toppings.  Place under the grill at high heat until the cheese is melted and bubbly. (about 3 to 4 minutes)

Allow the pizza to cool slightly, then cut into slices and serve.

I wanted to show you a nice picture of it sliced on a plate, but pizza stuck to my damn baking tray, so it didn’t but neatly grrr!

Verdict!

I really enjoyed this pizza, and it was lovely that it didn’t bloat me out afterwards and I felt very virtuous.  The only slight downside it that it did slightly repeat on me….

It’s not a pizza, but if you are looking for an light weight alternative then give this a go!.
